CHARACTERISTICS

With yellow gold tints, its complex nose reveals citrus and white flesh fruit flavours and subtle mineral notes that are the prelude to a long, intense and elegant taste in the mouth.

WINE-MAKING PROCESS

After a strict selection from the harvested grapes, this wine receives all the care that a modern cellar can provide in terms of temperature control followed by maturing on lees (stirring) in order to give it a more complex aromatic note and a good structure. We handle all of the wine-making, maturing and bottling processes.

BUGEY Red

CHARACTERISTICS

Deep, brilliant colour with ruby sheen, simple but intense fresh red fruit nose, with an equivalent taste in the mouth framed by the lively structure one expects from a young Gamay.

WINE-MAKING PROCESS

This wine is obtained after pre-fermentation hot maceration (between 50 to 60°C for around 12 hours) followed by a five- to six-day carbonic maceration, then finished with low-temperature alcoholic fermentation in the liquid phase (after pressing).
These operations enable optimum extraction of the aromatic potential that characterises the grape variety.

ANCESTRAL METHOD CERDON
Bugey Cerdon accroche

CHARACTERISTICS

Bright rosé colour, lively yet subtle flavour bouquet.

Intense red fruit and raspberry aromas.

In the mouth, very fruity, light with fine bubbles.

WINE-MAKING PROCESS

Ancestral Method - Partial low-temperature fermentation in vats creates a sweet wine with low alcohol content. Once filtered, the wine is clear and retains its yeast, continuing to ferment naturally in the bottle.
This causes the foam to begin forming. The yeast left behind is removed by filtration and decanting.

The bottles are corked and are ready to be consumed.

Rosé

CHARACTERISTICS

Made from Gamay grapes, very pleasant pink colour, fine and light foam with a dominant red fruit flavour, semi-dry character resulting from a balanced blend of the acidity and residual sugars (grape’s natural sugars).
